Carp roe dip

You beat carp roe with soaked bread and olive oil until you have a pale emulsion that stands — briny, lemon-sharp, lush rather than fishy. It should look like wet sand if the tarama is white, a faded rose if it has been dyed. Warm pita, a cool cucumber, and you are already eating.

On the islands it is breakfast; everywhere else it is the first thing on the mezze table with ouzo. This is an emulsion, closer to mayonnaise than to a dip, and it belongs with the other cold bowls.

Work the oil in as a thin stream until the mixture lightens and holds. Chill it half an hour. Taste: it should not taste of the tin. If it does, more lemon.

    Tear the stale bread into pieces and soak it in a bowl of cold water for 5 minutes, until it has gone quite soft. Then gather it up in your hands and squeeze it fiercely — you want a damp, compact mass, not a dripping sponge. Leftover water will thin the emulsion and you'll never get that mayonnaise-like body. Be thorough; it matters.

    Now work the tarama with the squeezed bread and the grated onion, either in a mortar if you enjoy the rhythm, or in a food processor if you want to be done with it. Keep going until you have a thick, homogeneous paste — no streaks of bread, no bits of onion standing apart. The roe should smell briny and clean, not of the tin. This paste is the foundation; everything else is oil.

    Here is the important part: drizzle in the olive oil in a thin, steady stream, beating all the while, exactly as you would for mayonnaise. The mixture will lighten from dusty rose or wet sand to something paler and thicker, and it will begin to hold its shape. When it does, loosen it with the lemon juice and a spoonful of cold water. You are looking for a dip that stands, not a sauce that pours.

    Taste it now: it should be briny, lemon-sharp, and lush — not fishy, not oily, not thin. If it tastes of the tin, it needs more lemon; if it tastes harsh, a drop more oil will round it. Cover and chill for 30 minutes so it firms and the flavors settle. Serve with warm pita or cool cucumber, and let people scrape the bowl.
