Slow-baked lamb

You seal lamb in parchment with lemon, garlic, and oregano, and hours later it falls from the bone. The potatoes underneath have drunk every drop of fat and juice. The steam that escapes when you tear the parcel is the cooking — lemon, garlic, rendered lamb — and you want everyone at the table for that moment.

This is the home-oven version of a sealed roast: no browning, no basting, only time and a tight wrap. Sunday lamb, a village red, a spoon instead of a knife.

Wrap so that no steam can escape, then leave it at 325°F for 3½ hours and do not peek. Open it at the table. The meat should pull from the bone with a spoon.

    Season the lamb generously with salt, pepper, and oregano — more than you think. Toss it with the smashed garlic, the lemon zest and juice, and the olive oil, turning so every surface is coated. Leave it 1 hour at room temperature, or overnight in the refrigerator. The lemon and oregano will work their way in, and the kitchen will start to smell like a taverna.

    Lay a large sheet of parchment inside a roasting pan, with plenty of overhang so you can wrap it later. Pile in the potatoes first, then the lamb and every drop of its marinade, and tuck in the bay leaves. If you are using the feta, nestle it among the potatoes, where it will soften and perfume the juices. You want a snug pile, not a spread-out layer — the parcel is about concentrated steam.

    Bring the parchment up and wrap it tightly around the lamb and potatoes, folding and crimping so the package is well sealed. Then wrap the whole parcel in foil, a second skin, so that no steam can escape. This is the whole method: no browning, no basting, only time and a tight wrap. If steam leaks, the meat will dry, so take an extra minute here; it is the most important fold of the afternoon.

    Slide the parcel into a 325°F oven and leave it alone for 3½ hours — do not peek, do not unwrap, do not baste. The sealed steam is doing all the work, and opening it early lets that work out. When the time is up, rest the parcel 15 minutes before you open it. The steam that escapes when you finally tear the paper is the cooking — you'll smell lemon, garlic, and rendered lamb fat.

    Carry the parcel to the table and tear it open there, so everyone gets that first rush of steam. The meat should pull from the bone with a spoon — if you need a knife, it wants more time, though after 3½ hours it almost never does. The potatoes underneath will have drunk every drop of fat and juice. Spoon the juices over the meat, and eat; a village red is all you need.
