Kale and potato soup

You want this bowl when the rain is on the windows: potatoes crushed into the broth until it turns creamy, kale sliced so fine it looks like grass, a slice of chouriço that stains the oil paprika-red. Eat it with a spoon and a heel of broa. It is lunch, dinner, and the thing you order standing at the bar.

This is the green soup of the Minho — farm kitchens, São João in Porto, every tasca that still puts a tureen on the zinc. Couve-galega is the tall kale of the northwest. The potatoes are not garnish; they are the body of the bowl.

Do not overcook the kale. Five minutes, still vivid. Fry the chouriço separately and float it, so the paprika oil blooms on the surface.

    Warm the olive oil in a heavy pot and cook the onion and garlic until they smell sweet and look translucent — no color, just softness. Add the potatoes, the water, and a good pinch of salt. Bring it up and simmer until the potatoes collapse into the broth, about 20 minutes. You should be able to crush one against the side of the pot with a spoon.

    Take a potato masher or a sturdy wooden spoon and mash the potatoes right in the pot, until the broth turns creamy and opaque. Don't puree them — you want body, not baby food. A few small lumps are a virtue; they remind you that this is a farmhouse soup. Taste for salt now, while you can still correct it.

    Stir in the kale, sliced as fine as grass, and simmer just 5 minutes. It should stay vivid — a true green, not the olive of overcooking. If it looks tired, you've gone too far. The soup is ready when the threads of kale still have a little snap and the broth is thick enough to coat a spoon.

    In a small pan, fry the chouriço slices until the paprika oil runs out and the edges curl. Ladle the soup into bowls and float a few slices on each, then a ribbon of that red oil. Don't skip this — the smoked fat blooming on the surface is half the pleasure. Serve at once, with broa if you have it.
